The MacGyver.  It’s 2:00am, you’re hungry, and the only items in your fridge is an everything bagel, a few pieces of shaved turkey, leafy greens, an egg, four cheese mix and some leftover homemade chimichurri.  What do you do?  You make this tasty experiment, satisfy your late night hunger, and live to eat another day.

Another ode to the beauty of South American sandwich arts.  The South American Cobb.  For some odd inexplicable reason, adding a piece of shaved ham to any sandwich just makes it that much better.  An out of the ordinary addition to an already not so ordinary sandwich.  Grilled chicken slices, feta cheese, avocado, leafy greens, mayo, and dijon mustard, on multi-grain bread.

Something beautiful.  The Burger a La Esquina, named after my favorite sandwich joint in Argentina.  It was there that I first tried a fried egg in a burger.  After that moment of enlightenment, sandwich creation and consumption has never been the same.  The combination of homemade hamburger, leafy greens, avocado, mayo, black pepper, and dijon mustard is a vision of pure deliciousness.

The beginning of something beautiful.  Homemade hamburgers.  Lean ground beef hand mixed with bread crumbs, ginger, cilantro, black pepper, salt, a pinch of paprika, sauteed garlic and onions, egg, and the good old ajo y perejil.

The Toonah Melt.  Not your average tuna melt.  Despite its unassuming appearance, this sleeper of a sandwich packs a lot of punch.  Seared ahi, mixed of course with mayonnaise beneath a layer of melted cheddar cheese, placed between two golden brown slices of multi-grain bread.  However, the ingredients list does not stop there.  Embedded in the still molten cheese was fresh ground black pepper, oregano, and dried ajo y perejil mixture from Argentina.

Today’s concoction is dubbed The Leftovers Sandwich due to its partial composition of remnants of past meals.  Grilled chicken and turkey bacon for starters, topped off with some avocado, mixed greens, feta cheese, a fried egg, dijon mustard, mayonnaise, salsa criolla, and a few turns of fresh ground black pepper.  All that love within two pillowy soft slices of fresh whole wheat bread.
